I could talk about Jason’s amazing business story. From working for seventeen years in bars and restaurants in every job from busser to General Manager, to then creating a line of cocktail inspired jams and jellies under the brand “Bar in a Jar,” to now running a full production line of over 25 Preservation & co. products, including hot sauces, cocktail mixes and pickled veggies.
I could talk about Jason’s Preservation & co. Bloody Mary Mix. From creating a unique recipe featuring capers, Dijon mustard, Balsamic reduction, and sriracha, to winning the Silver Medal at the 2012 National Absolut Bloody Mary Search in NYC, to selling his Bloody Mary Mix in over twenty states and 300+ bars.
I could even tell you stories about hot Brazilians, one creepy Jamaican, crashing dinners, business meetings, and strip clubs, crazy AirBnBs, $50 bloody marys, drunken shenanigans in LA, Seattle, New York, Las Vegas and, of course, San Francisco, tomato dudes, a very well used stack of one hundred $1 bills, blackout Branson, furries, and even more stories that have become so commonplace, no one seems to flinch any more.
But today, I won’t be doing any of that. I will say that “Brine Boss” Jason Poole of Preservation & co. is one ridiculously awesome dude with an equally awesome line of handcrafted specialty goods. Because when you get your hands on these products, that, good friends, is all that needs to be said.
Preservation & co. Bloody Mary Recipe
Serving Size - 1 Pint
Ingredients
6oz Preservation & co. Bloody Mary Mix
2oz Ketel One Citroen (or your choice of vodka)
Preservation & co. Sriracha Salt
Pickled Veg Garnish
Lemon Wedge
Directions
1. Using a lemon wedge, wet the rim of a pint glass. Pour a small amount of Preservation & co. Sriracha Salt onto a plate. Invert the glass onto the plate to create a salted rim.
2. Add 6 oz of Preservation & co. Bloody Mary Mix and 2 oz of Ketel One Citroen to the glass. Mix lightly.
3. Fill the glass with ice. Garnish with a lemon wedge and pickled veggies such as Preservation & co.’s Cayenne Carrot Sticks, Horseradish Dilly Beans or Hickory Brussels Sprouts.
Preservation & co. Cocktail Sauce
Ingredients
Serving Size - 1 Pint
3⁄4 cup Preservation & co. Bloody Mary Mix
1⁄2 cup Chili Sauce
1.5 T. Horseradish
2-3 T. Tomato Paste (depending on thickness preference)
1 t. lemon juice
1⁄2 t. cayenne pepper
Pinch Salt
Pinch Ground Black Pepper
Directions
1. Combine all ingredients in a bowl. Allow flavors to meld together by chilling in the refrigerator for at least two hours before using.
